Recipe : Avocado Chocolate Pudding

Avocado pudding? You must be kidding? NO
There is no whole milk, heavy whipping cream, cornstarch, or sugar that you find in most recipes. The base of this chocolate pudding, and what makes it creamy, is the avocado! This means you can use a lighter milk, or not even a dairy product at all (like almond milk, coconut milk, etc.) because you’re not relying on it as the main substance. It is then sweetened with agave nectar or honey creating a dessert I wouldn’t feel guilty about eating every night. And, it’s a recipe to keep in my stash for serving to my gluten-free or vegan friends.
Ingredients
- 2 ripe medium avocados, peeled and chopped
- 1/3 cup cocoa powder
- 1/4 cup honey or raw agave nectar (or other sweetener of choice)
- 1/2 cup milk (regular or almond milk, coconut, etc.)
- 1 1/2 teaspoon vanilla extract
Instructions

Blend all ingredients, until smooth, in a blender, food processor or using a hand held mixer. Serve immediately, or chill first.
