Recipe: Dark Cherry Tart

⚘Chocolate crust:
1 1/2 cup oats
3/4 cup hazelnuts, chopped
1 Tbsp cocoa powder
12 pitted dates, chopped
2 Tbsp hazelnut butter
1 Tbsp coconut oil
1 tsp vanilla bean paste
1/4 tsp Himalayan salt
1 Tbsp water *
Place the oats and hazelnuts in a food processor and blend until combined. Add the rest of the ingredients and blend until a sticky dough forms. (Add 1-2 Tbsp water depending on how sticky your dough is).
Press the dough firmly into the tart tin and place it into the refrigerator whilst making the filling. .
⚘Dark cherry filling
1 cup (150g) dark cherries, measured then pitted
2 cups almond milk
1/2 cup coconut milk
2 Tbsp agave
1 tbsp corn starch
1 tsp agar-agar
In a food processor, blend the cherries with almond and coconut milk. Add the agave and blend until well combined.
Pass the mixture through a sieve and pour it in a saucepan.
Add the corn starch and Agar-agar and cook over a medium heat until it starts to thicken.
Pour the mixture into a bowl and let it cool down until lukewarm.
Pour the filling into the tart base and let it cool down completely before placing it into the refrigerator for 2-3hrs to set. (Or overnight).
