It's summer and we're all trying to be beach body ready..... but what if I told you that you can be chilling in comfortable seamless clothing and eating something other than salad. These vegan Onigirazu (sushi sandwiches) are filled with mango and teriyaki tofu. So easy to make and perfect for a summer picnic with your Climawear outfit!🏖
Here's the recipe for the teriyaki tofu
(Makes 4)2 x 250g firm tofu2 Tbsp mirin2 Tbsp soy sauce 2 Tbsp sake4 Tbsp potato starch 2 Tbsp coconut oil .Wrap the tofu with paper towels and place it on a plate. Weight it down with a heavy object for 30 min to drain the water. To make teriyaki sauce, combine sake, mirin and soy sauce.Cut tofu horizontally (about 1 cm thick) then into 10x10 cm square. Coat the tofu with the potato starch, shake off the excess. In a non-stick frying pan, heat 2 Tbsp oil on medium high heat.Cook the tofu squares until the bottom side is golden brown. (About 3-4 min)Flip and cook the other side. When both sides are golden brown, pour in the teriyaki sauce and coat evenly.
